Katsu Curry with Peanuty Tofu by Bertie's Bite

10 minute peanutty, tofu ramen using the deliciously simple & flavourful @kabuto_noodles Katsu instant noodles // the only thing that makes me happier than a big bowl of noodles is a big bowl noodles that takes less than 10 minutes to prepare & costs less than a fiver! This 6 ingredient store-cupboard lunch is a must if you’re short on time but always wanting your meals BIG on flavour

1 pack @kabuto_noodles Katsu Noodles
1 tbsp peanut butter
½ tbsp cornflour

For the tofu (optional)
100g tofu, pressed & cut into cubes
½ tbsp honey
½ tbsp sriracha
½ tbsp peanut butter

- For the ramen simply prepare the noodles according to the packet instructions (minus 1 minute), spoon out 1 ladle of the ramen broth and whisk together with the peanut butter and cornflour. Empty both the peanut mix and the noodles into a pan and stir to combine.
- In a small bowl mix together the honey, sriracha and peanut butter. Heat a small amount of oil in a mini frying pan. Once hot, add in your tofu pieces and fry, turning every few minutes until starting to crisp up. Pour over the spicy honey mix, and make sure the tofu is fully coated. Cook until you have a nice crispy coat on your tofu. Serve over the warm noodles with some spring onions and any other toppings you fancy. Today I opted for some chilli oil.
